I have been making a version of this roasted vegetable pasta with creamy tomato sauce for decades, and in my 30s, it was my favourite dinner-party dish. Pasta, plus a delicious, flavour-packed tomato sauce, tossed with roasted courgette, aubergine and red onion is a delicious flavour combination.
